Rad-Kids Cook with Carrots!

 

This week Raddish is cooking with carrots! We love them because they are packed with nutrients and may be prepared in so many ways -- raw, baked, broiled, boiled, fried, steamed, pureed, and juiced!

How does your family cook and eat carrots?  What can you create with carrots this week?

Carrot conversations for Rad-Families:

Q. What color are carrots?

A. The carrots that we see today are usually orange but actually carrots were not orange until the 1600’s. Carrots were either purple, red, yellow, or white. Orange carrots were created by cross breeding red and yellow carrots. These carrots also resulted in a sweeter flavor and were not as woody as previous carrots.

Q. What part of the carrot do we eat?

A. Carrots are a root vegetable meaning that we eat the part grown underneath the ground or the root.

Q. Has anyone ever told you that carrots give you good eye sight? Are carrots good for us?

A. Carrots are a good source of beta carotene which, once it enters our body, will be turned into Vitamin A. Our bodies need Vitamin A, it helps us see in the dark, fight infection, gives us nice skin, and supports strong bones. Carrots are also full of fiber and antioxidants. Fiber helps us stay fuller longer and antioxidants keep us from getting sick.

Crunchy Carrot Salad

Ingredients:

3 cups matchstick or shredded carrots

1/2 cups raisins

1 large apple, cored and diced

1/2 cup plain Greek yogurt

2-3 Tbsp sugar

2 Tbsp fresh lemon juice

Salt, to taste

Steps for Rad-Kids:

1.  Toss carrots, raisins, and apples together in a large bowl.

2.  Combine yogurt, sugar, lemon juice, and salt.

3.  Stir sauce into carrot mixture. TASTE & SHARE!
