Simple Tricks for Great Deviled Eggs:
The Older, The Better: Fresh eggs are harder to peel. Make a note to purchase your eggs a week in advance!
Cook 'em Gently: Place your eggs in a saucepan filled with cool water. Bring the water to a boil, then reduce the heat to a gentle simmer and cook for 10 minutes. Cool the eggs under cold running water to stop the cooking process (and avoid dark over cooked yolks).
Perfect Peel: Eggs are easier to peel when held under cool running water.
Pretty Piping: Piping is a great way to transfer the filling back into the egg white. Once mixed together, transfer your egg yolk mixture into a resealable plastic bag. Cut a small whole at the corner of the plastic bag and apply pressure to squeeze the filling into your egg whites.
Deviled Eggs 3 Ways
Traditional
1. Hard boil 6 eggs.
2. Mix the filling. Mash egg yolks with:
- ¼ cup light mayonnaise
- 1 tsp Dijon prepared mustard
- 1 tbsp sweet pickle relish
- 1 tbsp wine vinegar or squeeze of lemon juice
- Salt and pepper to taste
3. Pipe filling into egg whites and garnish with a dash of paprika.
The Californian: Bacon & Avocado
1. Hard boil 6 eggs.
2. Mix the filling. Mash egg yolks with:
- 3 pieces cooked bacon, diced
- 1 ripe avocado
- 1 tbsp cilantro, chopped
- 1 tsp Dijon style prepared mustard
- 1 tsp fresh lemon juice
3. Pipe filling into egg whites and garnish with 6 cherry tomatoes, halved, and extra bacon.
Mediter-Indian: Greek Yogurt Curry
1. Hard boil 6 eggs.
2. Mix the filling. Mash yolks with:
- ¼ cup Greek yogurt
- 1 tsp Dijon style prepared mustard
- 1 tsp yellow curry powder
- 1 dash hot sauce (if desired)
- 1 tbsp celery, minced
- 2 tbsp green onions
3. Pipe filling into egg whites and garnish with 1 tsp minced cilantro.
