Dietary Modifications for Greek Feasts

We strive to accommodate the needs of all families. Below please find recommended substitutions for our Rad Families with dietary restrictions.

Gluten-Free

Spanakopita Bites>> Swap filo dough for 8 gluten-free tortilla wraps (8-10 inches wide), such as Food 4 Life, Mission or La Tortilla Factory.
       •Replace Steps 5-11 with the following steps:
              1. Soften tortillas in microwave for 20 seconds to avoid breaking when filling.
              2. Heat only 2 Tbsp of butter in microwave until melted, 15-30 seconds.
              3. Cut one tortilla in half. (Do not brush with butter.)
              4. Add 1 Tbsp of spinach-cheese filling to the corner of each tortilla half.
              5. Fold the corner of each tortilla half to make a triangle.
              6. Continue folding 3 more times to make a finished triangle pocket.
              7. Set on parchment-lined baking sheet. Repeat 7 more times to make 16 triangles.
              8. Brush tops with melted butter.


Chicken Skewers>> Use gluten-free pita bread, such as BFree or MyBread.

Dairy Allergy

Spanakopita Bites>>
       •Use dairy-free butter, such as Earth Balance.
       •For Parmesan and feta:
              1. Use dairy-free Parmesan such as Follow Your Heart or Go Veggie! and increase to ½ cup.
              2. Omit feta.
       •For Ricotta – choose one:
              1. Use dairy-free ricotta, such as Tofutti or Kite Hill.
              2. Make Tofu Ricotta by processing the following ingredients in a food processor:
                     •1 package (12 - 14 oz) firm tofu (drained and patted dry)
                     •1 tsp dried oregano
                     •1 tsp dried basil
                     •3 Tbsp fresh squeezed lemon juice
                     •2 Tbsp olive oil
                     •2 tsp nutritional yeast (optional)
                     •½ tsp salt

Chicken Skewers>> Use dairy-free Greek style yogurt, such as So Delicious, Daiya or Ripple, or use your favorite regular dairy-free yogurt.

Egg Allergy

Spanakopita Bites>>
       •Use 1 flax egg:
              1. Combine 1 Tbsp finely ground flaxseed meal with 2.5 Tbsp water.
              2. Let rest 5 minutes to thicken.

Lemon Rice Soup>>
       •Use 2 flax eggs:
              1. Combine 2 Tbsp finely ground flaxseed meal with 5 Tbsp water.
              2. Let rest 5 minutes to thicken.

Vegetarian

Lemon Rice Soup>> Omit chicken.

Chicken Skewers>> Replace chicken:
       1. During Step 2, prepare the following vegetables:
              •2 (8 oz) packages whole cremini mushrooms
              •1 cup cherry tomatoes
              •2 bell peppers, cut into large chunks
              •1 red onion, cut into large chunks
              •2 yellow squash or green zucchini, sliced into thick rounds
       2. During Step 12, bake 12-15 minutes.


Vegan

Spanakopita Bites>>
