Gluten-Free
Avocado Eggs Benedict>> Use gluten-free English Muffins, such as Udi’s, Glutino or Food For Life. Alternatively, use your favorite gluten-free bread.
Granola Cup Parfaits>>
-Use gluten-free rolled oats, such as Bob’s Red Mill, or GF Harvest.
-Use gluten-free crisp rice cereal, such as Erewhon, Barbara’s, or Nature’s Path.
Lemon Poppy Seed Scones>> Use gluten-free flour, such as King Arthur Flour’s Measure For Measure.
Dairy Allergy
Granola Cup Parfaits>> Use dairy-free vanilla yogurt.
Lemon Poppy Seed Scones>>
-Use dairy-free butter, such as Earth Balance.
-Use dairy-free milk, such as almond, cashew, coconut, or pea protein.
Egg Allergy
Avocado Eggs Benedict>> Replace eggs with 2 firm or extra firm tofu slices, about ½” thick. Sauté until slightly browned in pan.
Lemon Poppy Seed Scones>>
-Use 1 flax egg:
(1) Combine 1 Tbsp finely ground flaxseed meal with 2.5 Tbsp water.
(2) Let rest 5 minutes to thicken.
Vegetarian
Avocado Eggs Benedict>>
-Use veggie bacon, such as Morning Star, or tempeh bacon, such as Tofurkey.
-Alternatively, replace bacon with sautéed mushrooms.
(1) Chop an 8 oz. container of mushrooms in small pieces.
(2) Melt 1 Tbsp butter in skillet over medium heat.
(3) Add mushrooms, ½ tsp salt, and ¼ tsp pepper.
(4) Cook mushrooms until softened and golden brown, about 5 minutes.
Vegan
